The ingredients needed to cook Nut Flapjack:

  1. Get 250 grams of rolled oats.
  2. Prepare 50 grams of dessicated coconut.
  3. Provide 50 grams of sunflower seeds.
  4. Use 150 grams of hazelnuts, crushed into rough chunks.
  5. Get 100 grams of walnuts, crushed.
  6. Get 75 grams of whole almonds, crushed.
  7. You need 150 grams of dark chocolate drops.
  8. Prepare 180 grams of caster sugar.
  9. Use 180 grams of muscavado brown sugar.
  10. You need 200 ml of water.

Steps to make Nut Flapjack:

  1. Mix together in a heat proof bowl the oats, coconut, walnuts, sunflower seeds, crushed almonds and chocolate drops.
  2. In a saucepan, heat the water and both sugars on a medium heat for about 10mins. Do not stir. It should reach about 104-105°c..
  3. Add the hazelnut chunks to the pan for 2-3mins..
  4. Take off the heat and mix into the bowl until combined thoroughly..
  5. Tip the mixture into a baking tray lined with greaeproof paper and flatten down to desired thickness. Place the mixture in the fridge for 2-3 hours..
  6. At this stage you can eat it if you like really sticky flapjack. Alternatively, pre-heat an oven to 220°c / 200°c fan..
  7. Place the tray in the oven for 20-25mins or until browning on top. The mixture should become firmer and less sticky to touch..
  8. Remove from oven, slice into pieces and allow to cool..

Flapjacks are perfect for taking to work, school or having a snack with a cuppa! This healthy flapjack recipe is slightly less sugary than normal. Pulse the butter, dried fruit and nuts, oats and flour in a food processor until the mix comes together and away from the sides, then pulse in the syrup until fully combined. Grease the baking tin with a little butter using a paper towel. Put the butter,sugar and honey and golden syrup in the pan over a low heat and stir until melted.
